Bactoferm® SM-194 25g is a multi-application culture that combines all the positive characteristics of the different strains. Lactobacillus sakei has very good growth potential and the ability to suppress the growth of many native bacteria. Pediococcus pentosaceus delivers a mild lactic acid taste and accelerated pH drop at higher temperatures. The combination of two different staphylococci gives more intense color formation and mild aroma development and the yeast Debaromyces hansenii adds a more "Mediterranean" flavor.
Directions: The contents of the sachet are added when grinding, cutting or mixing at the start of the process with other drying ingredients to ensure even distribution.
