SafePro® F-LC 25g is a multi-strain culture combining the advantages of each of these in terms of acidification, color and flavor formation as well as strong protection against Listeria. It is composed of Pediococcus Pentosaceus, Staphylococcus xylosus. The high concentration of Pediococcus pentosaceus gives a controlled and moderate pH-drop. The acidification gives a mild lactic acid taste. The used Staphylococcus xylosus gives good color formation and stability.
Furthermore the Staphylococcus xylosus gives a very round and mild flavor which is very typical for South European salami types such as Milano
Directions: The contents of the sachet are added when grinding, cutting or mixing at the start of the process with other drying ingredients to ensure even distribution.
